Try these irresistible Twix Cookies featuring a buttery shortbread base, a creamy caramel layer, and a smooth chocolate topping. Perfect for a sweet treat or dessert!

Shortbread Base:

  • 2 cups all-purpose flour
  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Caramel Layer:

  • 14 ounces caramel candies, unwrapped
  • 2 tablespoons heavy cream

Chocolate Topping:

 

  • 1 1/2 cups semi-sweet chocolate chips
  • 1 teaspoon vegetable oil (optional, for smoothness)

Instructions

  • Preheat your oven to 350°F (175°C) and line a 9x13 inch baking pan with parchment paper.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Mix in the vanilla extract and salt.
  • Gradually add the all-purpose flour, mixing until a dough forms.
  • Press the dough evenly into the prepared baking pan.
  • Bake for 20-25 minutes, or until the shortbread is lightly golden around the edges. Let it cool completely.
  • In a microwave-safe bowl, combine the caramel candies and heavy cream. Microwave in 30-second intervals, stirring between each, until smooth and melted.
  • Pour the melted caramel over the cooled shortbread base and spread it evenly. Let it set until firm.
  • In another microwave-safe bowl, melt the semi-sweet chocolate chips (and vegetable oil, if using) in 30-second intervals, stirring until smooth.
  • Pour the melted chocolate over the set caramel layer and spread evenly.
  • Allow the chocolate to set completely before cutting into bars.

Notes

  • For a firmer caramel layer, let the caramel set in the refrigerator.
  • Store cookies in an airtight container at room temperature for up to 1 week.
  • For easier cutting, dip the knife in hot water before slicing the cookies.
