Ingredients

  • 1 lb boneless, skinless chicken breasts, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • 2 tbsp olive oil
  • 1 tsp chili powder

  • 1 tsp cumin
  • Salt and pepper, to taste
  • Juice of 1 lime
  • Warm tortillas, for serving

Instructions

  • In a bowl, toss the chicken strips with chili powder, paprika, cumin, salt, and pepper.
  • Heat olive oil in a skillet over medium-high heat. Add the chicken and cook for 5-6 minutes until browned and cooked through.
  • Remove the chicken, and in the same skillet, add the bell peppers and onion. Sauté until tender-crisp, about 4-5 minutes.
  • Return the chicken to the skillet, squeeze lime juice over everything, and stir until combined.
  • Serve warm with tortillas and your favorite toppings like salsa, sour cream, or guacamole.
