1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
2 tsp vanilla extract
1/4 tsp almond extract (optional)
2 1/2 cups all-purpose flour
1/4 tsp baking soda
1/4 tsp salt
3 tbsp strawberry gelatin powder
30-35 chocolate kisses (unwrapped)
Instructions
Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
In a large bowl, cream together butter and sugar until light and fluffy.
Beat in egg, vanilla extract, and almond extract (if using).
Gradually mix in flour, baking soda, salt, and strawberry gelatin powder until fully combined.
Roll dough into 1-inch balls and place on prepared baking sheets about 2 inches apart.
Bake for 10-12 minutes or until edges are set but cookies remain soft.
Remove cookies from the oven and immediately press a chocolate kiss into the center of each cookie.
Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Store cookies in an airtight container at room temperature for up to 5 days.
