  • 400g spaghetti
  • 150g pancetta, diced
  • 2 large eggs
  • 2 large egg yolks
  • 1 cup (100g) grated Parmesan cheese
  • 2 cloves garlic, minced (optional)
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil and cook the spaghetti until al dente. Reserve 1 cup of pasta water, then drain.
  2. In a large pan, cook the pancetta over medium heat until crispy. Add minced garlic if using and cook for 1 more minute.
  3. In a bowl, whisk together eggs, egg yolks, and Parmesan cheese. Add a generous amount of black pepper.
  4. Toss the hot spaghetti into the pan with the pancetta. Turn off the heat, then mix in the egg and cheese mixture, tossing quickly to avoid scrambling.
  5. Add reserved pasta water a little at a time until you achieve a creamy sauce consistency.
  6. Serve immediately with extra Parmesan and black pepper.

Notes

  • Use Pecorino Romano cheese for a more traditional flavor.
  • Avoid adding cream for authenticity. The creamy texture comes from the egg and cheese mixture.
