Slow Cooker Chicken Salad is a delightful and healthy dish featuring tender, slow-cooked chicken breasts combined with a flavorful mix of fresh vegetables and a tangy dressing.

  • For the Chicken:
    • 4 boneless, skinless chicken breasts
    • 1 cup low-sodium chicken broth
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • Salt and pepper to taste
  • For the Salad:
    • 1 cup mayonnaise
    • 1 tablespoon Dijon mustard
    • 1 tablespoon lemon juice
    • 2 celery stalks, finely chopped
    • 1/2 red onion, finely diced
    • 1/2 cup chopped dill pickles
    • 1/4 cup fresh parsley, chopped
    • 1 cup red grapes, halved
    • 1/2 cup sliced almonds
    • Salt and pepper to taste

Instructions

  • Place chicken breasts in a slow cooker with chicken broth, garlic powder, onion powder, salt, and pepper.
  • Cook on low for 6-7 hours or until chicken is tender and easily shredded.
  • Remove chicken from the slow cooker, shred with two forks, and let it cool.
  • In a large bowl, combine mayonnaise, Dijon mustard, and lemon juice.
  • Add celery, red onion, dill pickles, parsley, grapes, and almonds to the bowl.
  • Mix in the shredded chicken and season with salt and pepper to taste.
  • Chill in the refrigerator for at least 1 hour before serving.

Notes

  • For a lighter version, substitute mayonnaise with Greek yogurt.
  • Can be served on a bed of lettuce or in a sandwich.
