  • 1 lb sausage (sliced)

  • 2 large sweet potatoes (peeled and cubed)

  • 2 tbsp olive oil

  • 3 tbsp honey

  • 3 cloves garlic (minced)

  • 1 tsp smoked paprika

  • ½ tsp salt

  • ½ tsp black pepper

  • 1 tbsp soy sauce

  • 1 tsp Dijon mustard

  • ½ tsp red pepper flakes (optional)

  • Fresh parsley (for garnish)

Instructions

  • Preheat oven to 400°F (200°C).

  • In a large bowl, toss sweet potatoes with olive oil, salt, black pepper, and smoked paprika.

  • Spread sweet potatoes on a baking sheet and bake for 20 minutes.

  • While potatoes bake, mix honey, garlic, soy sauce, Dijon mustard, and red pepper flakes in a bowl.

  • Add sausage slices to the baking sheet, drizzle with honey garlic sauce, and toss to coat.

  • Return to oven and bake for another 15-20 minutes until sausages are browned and potatoes are tender.

 

  • Garnish with fresh parsley and serve warm.
