These rainbow M&M cookies are a fun and colorful treat with a soft, chewy center and a sweet crunch from the M&Ms. Made with simple ingredients, these cookies are perfect for parties, holidays, or an everyday snack.   • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 cups M&Ms (plus extra for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs and vanilla extract, beating until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in 1 1/2 cups of M&Ms.
  7. Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Press a few extra M&Ms onto the tops of each cookie dough ball for decoration.
  9. Bake for 10-12 minutes, or until the edges are lightly golden and the centers are still soft.
  10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For extra soft cookies, slightly underbake and let them cool on the baking sheet. You can use holiday-themed M&Ms for a festive twist.
