The Rachel Sandwich is a classic twist on the Reuben, made with turkey, tangy coleslaw, Swiss cheese, and Russian dressing, layered on rye bread and grilled to golden perfection. Perfect for lunch or a quick dinner, this sandwich is packed with flavor and easy to prepare at home!

Ingredients

  • 8 slices of rye bread
  • 8 slices of turkey breast
  • 4 slices of Swiss cheese
  • 1 cup coleslaw
  • 4 tbsp Russian dressing
  • 2 tbsp butter, softened

Instructions

  • Preheat a skillet or griddle over medium heat.
  • Spread butter on one side of each slice of rye bread.
  • On the unbuttered side of four slices, layer turkey, coleslaw, Swiss cheese, and Russian dressing.
  • Top with the remaining slices of bread, buttered side facing out.
  • Place the sandwiches on the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted.
  • Serve warm and enjoy!
