This Potsticker Soup with Mushrooms & Bok Choy is a comforting and easy-to-make dish featuring dumplings, shiitake mushrooms, and tender bok choy in a flavorful broth. Perfect for a quick weeknight meal, this soup is packed with umami flavor and nutrients.

Ingredients

  • 1 tbsp sesame oil
  • 4 cups chicken or vegetable broth
  • 2 cups water
  • 1 tbsp soy sauce
  • 1 tsp grated ginger
  • 2 cloves garlic, minced
  • 8-10 frozen potstickers or dumplings
  • 1 cup shiitake mushrooms, sliced
  • 2 cups bok choy, chopped
  • 2 green onions, sliced
  • ½ tsp chili flakes (optional)
  • Salt & pepper to taste

Instructions

  • Heat sesame oil in a pot over medium heat. Add garlic and ginger, sauté for 1 minute.
  • Pour in broth and water, then add soy sauce. Bring to a simmer.
  • Add mushrooms and cook for 3-4 minutes until softened.
  • Drop in frozen potstickers and simmer for 5-7 minutes, or until cooked through.
  • Stir in bok choy and cook for another 2 minutes.
  • Season with salt, pepper, and chili flakes (if using).
  • Serve hot, garnished with green onions.

Notes

  • Use vegetable broth for a vegetarian version.
  • Swap shiitake mushrooms for any variety you prefer.
  • Adjust seasoning with extra soy sauce or chili oil for added depth.
