  • ¾ cup orange juice (freshly squeezed)
  • ½ cup unsalted butter, melted
  • 1 large egg
  • 1 tbsp orange zest
  • 1 ½ cups fresh or frozen cranberries

Instructions

  • Preheat the oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, combine the orange juice, melted butter, egg, and orange zest. Mix well.
  • Gradually add the wet ingredients to the dry ingredients and mix until just combined.
  • Fold in the cranberries gently. Avoid overmixing.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 55-65 minutes or until a toothpick inserted in the center comes out clean.
