  • 12 oz pasta (penne, rigatoni, or your choice)
  • 1/2 cup red wine (optional)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Parmesan cheese, grated (for garnish)
  • Fresh basil or parsley, chopped (for garnish)

Instructions

  • Heat olive oil in a large pot over medium-high heat. Add ground beef, season with salt and pepper, and cook until browned. Remove excess fat if necessary.
  • Add the onion, garlic, carrot, and celery to the pot. Cook until vegetables are softened, about 5 minutes.
  • Stir in the tomato paste, cooking for 1-2 minutes. Add red wine (if using) and let it simmer for a few minutes until reduced.
  • Pour in the beef broth, crushed tomatoes, and diced tomatoes. Stir in oregano, basil, thyme, and red pepper flakes (if using).
  • Bring the mixture to a simmer. Add the pasta, ensuring it is submerged in the liquid. Cover and cook for about 15-20 minutes, stirring occasionally, until the pasta is al dente.
  • Adjust seasoning with salt and pepper. Serve topped with grated Parmesan cheese and fresh basil or parsley.

Notes

For extra depth of flavor, simmer the sauce longer before adding the pasta. Adjust the thickness of the sauce by adding more beef broth if needed.
