  • 12 oz pasta (spaghetti or linguine)

  • 1 cup whole milk ricotta cheese

  • 1 lemon (zest and juice)

  • 1/4 cup grated Parmesan cheese

  • 2 tablespoons olive oil

  • Salt and black pepper to taste

  • 1/4 cup reserved pasta water

  • Optional: fresh basil or parsley for garnish

Instructions

  • Cook pasta according to package directions. Reserve 1/4 cup of pasta water and drain.

  • In a bowl, mix ricotta, lemon zest, lemon juice, Parmesan, olive oil, salt, and pepper.

  • Return pasta to pot, add ricotta mixture, and toss over low heat.

  • Add reserved pasta water gradually until sauce reaches desired consistency.

 

  • Serve warm, garnished with herbs if desired.
