  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup milk
  • 1 pound potato gnocchi
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1 cup fresh spinach, chopped
  • 1/4 cup grated Parmesan cheese

Instructions

  • In a large pot, heat olive oil and butter over medium heat. Add onion, carrots, and celery, sautéing until softened.
  • Stir in garlic and cook for 30 seconds. Add flour, stirring constantly for 1 minute.
  • Gradually whisk in chicken broth, then add heavy cream and milk. Bring to a gentle simmer.
  • Stir in gnocchi, shredded chicken, Italian seasoning, salt, and pepper. Simmer for 5-7 minutes until gnocchi is tender.
  • Add spinach and Parmesan cheese, stirring until spinach wilts.
  • Adjust seasoning as needed and serve warm.
