Ingredients

  • Chicken Breasts (1 ½ pounds, boneless, skinless)

  • Chicken Broth (4 cups, low-sodium)
  • Onion (1 medium, finely chopped)
  • Garlic (4 cloves, minced)
  • Cumin (2 teaspoons, ground)
  • Oregano (1 teaspoon, dried)
  • Chili Powder (1 teaspoon)
  • Ground Coriander (1 teaspoon, optional)
  • Salt and Pepper (to taste)
  • Olive Oil (2 tablespoons)
  • Lime Juice (1-2 tablespoons, fresh)

Optional Ingredients for Extra Creaminess:

  • Cream Cheese (4 ounces, softened)
  • Sour Cream (½ cup)
  • Heavy Cream (½ cup)

Optional Toppings:

  • Shredded Cheese (Cheddar, Monterey Jack, or Pepper Jack)
  • Fresh Cilantro (chopped, for garnish)
  • Avocado (sliced or diced)

Instructions

  • In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until softened, about 5 minutes. Add minced garlic and cook for another minute.
  • Add chicken breasts to the pot and pour in the chicken broth. Bring to a boil, then reduce heat and simmer until the chicken is cooked through, about 20 minutes.
  • Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
  • Stir in the white beans, diced green chilies, cumin, oregano, chili powder, ground coriander (if using), salt, and pepper. Simmer for 10-15 minutes to allow the flavors to meld.
  • For a creamier chili, stir in softened cream cheese, sour cream, or heavy cream until fully incorporated. Add fresh lime juice to taste.
  • Serve hot, garnished with your favorite toppings such as shredded cheese, cilantro, avocado, tortilla chips, and sliced jalapeños.

Notes

  • For a richer flavor, use chicken thighs instead of breasts.
  • Adjust the level of creaminess by adding more or less cream cheese, sour cream, or heavy cream.
