Ingredients

  • 1 small head of cabbage, chopped
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 bell pepper, diced
  • 3 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups vegetable broth
  • 1 teaspoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional)
  • 1 zucchini, sliced
  • 1 cup green beans, chopped

 

  • 2 cups spinach or kale

Instructions

  • Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, celery, and bell pepper. Sauté until softened.
  • Pour in the vegetable broth and add diced tomatoes, cabbage, green beans, and zucchini. Stir well.
  • Season with oregano, basil, salt, black pepper, and red pepper flakes. Bring to a boil.
  • Reduce heat and simmer for 20–25 minutes until all vegetables are tender.
  • Stir in spinach or kale and cook for another 5 minutes.

 

  • Serve warm and enjoy!

Notes

  • Can be stored in the fridge for up to 5 days or frozen for longer storage.
  • Add lean protein like chicken or beans for extra nutrients.
