3 cups cooked chicken, shredded or cubed
4 cups fresh broccoli florets (or frozen, thawed)
2 cups cooked rice
1 cup shredded cheddar cheese (plus extra for topping)
1 can (10.5 oz) cream of chicken soup
1 cup sour cream
1/2 cup milk
1 tsp garlic powder
1 tsp onion powder
1/2 tsp paprika
Salt and pepper to taste
1/2 cup breadcrumbs (optional, for topping)
Instructions
Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish.
Prepare ingredients: Cook the rice and chicken if not pre-cooked. Steam broccoli until tender-crisp.
Mix casserole filling: In a large bowl, combine cream of chicken soup, sour cream, milk, garlic powder, onion powder, paprika, salt, and pepper. Stir in chicken, broccoli, rice, and cheese.
Assemble casserole: Pour the mixture into the prepared baking dish. Top with additional shredded cheese and breadcrumbs, if desired.
Bake: Bake uncovered for 25-30 minutes or until bubbly and golden on top.
Serve: Allow to cool slightly before serving.
Notes
For a low-carb version, replace rice with cauliflower rice.
