This Broccoli Chicken Casserole is the perfect one-dish meal combining tender chicken, fresh broccoli, and cheesy goodness. Perfect for busy weeknights or meal prep!

  • 3 cups cooked chicken, shredded or cubed
  • 4 cups fresh broccoli florets (or frozen, thawed)
  • 2 cups cooked rice
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional, for topping)

Instructions

  • Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  • Prepare ingredients: Cook the rice and chicken if not pre-cooked. Steam broccoli until tender-crisp.
  • Mix casserole filling: In a large bowl, combine cream of chicken soup, sour cream, milk, garlic powder, onion powder, paprika, salt, and pepper. Stir in chicken, broccoli, rice, and cheese.
  • Assemble casserole: Pour the mixture into the prepared baking dish. Top with additional shredded cheese and breadcrumbs, if desired.
  • Bake: Bake uncovered for 25-30 minutes or until bubbly and golden on top.
  • Serve: Allow to cool slightly before serving.

Notes

  • For a low-carb version, replace rice with cauliflower rice.
